Poached Salmon with Snap Peas

Poached Salmon with Snap Peas

Poached Salmon

  • 1 cup Vegetable Broth
  • 1 cup Water
  • 1 Small Onion, Sliced
  • 1/2 tsp Salt
  • 1 Bay leaf
  • 4 Peppercorns
  • 4 Sprigs Parsley
  • Ground Black Pepper
  • 4 Salmon Fillets

In deep frypan, combine all ingredients except salmon.

Bring to simmer.

Add salmon and retum to simmer.

Cover and simmer for 4 - 6 minutes or until opaque.

Remove from heat and let salmon sit in warm liquid 2 - 3 minutes.

Remove to plate and gamish with Caper Sauce and serve with Snap Peas.

Makes 4 servings.

Snap Peas

  • 3 cups Snap Peas
  • Butter
  • Salt and Pepper

Wash snap peas and remove tips

Steam snap peas for 2- 3 minutes

Drain and top with a little butter and salt and pepper to taste

Optional: Sprinkle with sesame seeds

Caper Sauce

  • 1/3 cup Light Mayonnaise
  • 1 tbsp Capers

Combine light mayonnaise and capers and gamish salmon
