Cranberry Oatmeal Loaf

Cranberry Oatmeal Quick Bread
  • 1 1/4 cups Flour
  • 3/4 cup Sugar
  • 1/2 tsp Salt
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 cup Uncooked rolled oats (quick-cooking or old-fashioned)
  • 1 cup Dried cranberries
  • 1 cup Applesauce
  • 1/3 cup Canola oil
  • 2 Eggs
  • 1/4 cup Milk
  • Preheat oven to 355 °F.
  • In a medium bowl, whisk together flour, sugar, salt, baking powder, baking soda. Stir in oatmeal and dried cranberries.
  • In a second medium bowl, beat together remaining ingredients.
  • Add applesauce mixture to dry ingredients and stir until moistened.
  • Pour into greased loaf pan.
  • Bake for 50 minutes or until a toothpick inserted into the centre comes out clean.
  • Cool on wire rack.
  • Makes 1 loaf.
