Cranberry Oatmeal Quick Bread

Ingredients

  • 1 1/4 cups Flour
  • 3/4 cup Sugar
  • 1/2 tsp Salt
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 cup Uncooked rolled oats (quick-cooking or old-fashioned)
  • 1 cup Dried cranberries
  • 1 cup Applesauce
  • 1/3 cup Canola oil
  • 2 Eggs
  • 1/4 cup Milk

Directions

  1. Preheat oven to 355°F.
  2. In a medium bowl, whisk together flour, sugar, salt, baking powder, baking soda. Stir in oatmeal and dried cranberries.
  3. In a second medium bowl, beat together remaining ingredients.
  4. Add applesauce mixture to dry ingredients and stir until moistened.
  5. Pour into greased loaf pan.
  6. Bake for 50 minutes or until a toothpick inserted into the centre comes out clean.
  7. Cool on wire rack.
