Pineapple, Grape, and Custard Trifle

Ingredients

  • 46 Vanilla flavored wafers (each wafer about 1 1/2 inch in. diameter)
  • 1 Can 14 fl oz Pineapple tidbits packed in pineapple juice
  • 2 (3.8 oz) packages Dr.Oetker Organics Pudding Mix (vanilla flavor)
  • 3 cups Milk
  • 2 cups 35% Whipping cream
  • 1 tbsp Sugar
  • 1 tsp Vanilla extract
  • 1 cup Red seedless grapes

Directions

  1. Count out 46 cookies. Set aside.
  2. Drain the pineapple tidbits.
  3. In a large bowl, prepare the pudding mix according to package directions. Cool 5 minutes, stirring twice.
  4. Pour the whipping cream into a large bowl. Add the sugar and vanilla. Whip the cream using an electric mixer until the cream is stiff and fluffy.
  5. Fold 1 cup of the whipped cream into the cooled pudding. Set aside.
  6. Cut grapes in half; set aside.
  7. Assemble the trifle:

  8. Layer 22 cookies on the bottom and around the sides of a trifle bowl.
  9. Spoon on 1/3 of the pudding, pineapple and grapes.
  10. Add another layer of 8 cookies; pudding, pineapple and grapes.
  11. Repeat layer again saving pineapple tidbits and grape halves to decorate the top.
  12. On final pudding layer, place remaining 8 cookies around the outside edge of the trifle bowl dipping into the pudding to secure in place.
  13. Spoon on remaining whipped cream. Top with reserved fruit.
  14. Cover and refrigerate. Can be made 24 hours ahead. Makes 8 to 10 servings.
